#1 White-Pepper Crab…No Signboard–

IMG_8157 IMG_8156 IMG_8152 IMG_8149MMM!  We cannot get enough crab here in Singapore. . .there are so many varieties–it is amazing.  For the best white-pepper crab I recommend that you hit the place you see above: No Signboard.  This place used to have no name at all and literally no signboard out front. . .all the regulars didn’t know what to call it so they started calling it ‘no signboard,’ and the name stuck to the point that it is now the official name of the joint.  Anyway. . .

. . .they have every kind of crab here: chilli, black pepper, salted egg, bee hoon, etc., but they are renowned as the creators of the dish known as White Pepper Crab, and it is delectable. . .we love it!  In fact, we eat both the Black Pepper Crab and the White Pepper and actually prefer the White Pepper here. . .but they are all good–you will be happy with them all whenever you eat here.  So, come on over to Singapore, take a cab to the original No Signboard location on Geylang Road, possibly the most important eating street in all of Singapore, sit down in the open-air space, order some crabs, order some icy-cold Tiger beers, and get ready to gobble a meal that you will not soon forget. . .hao-hao!

Day 23…Chilli Crab–

IMG_0010 IMG_0007 IMG_0006 IMG_8024POW!  So, on our first full day here in Singapore we have to pop into a place called Roland Restaurant.  Roland Restaurant is where the signature dish of Singapore, Chilli Crab, was created, and I gotta tell you, this thing is extremely good. . .mmm, aaaahh!!–we love Chilli Crab at Roland in Singapore.

They have been knockin’ this dish out here for nearly 60 years now. . .2016 will be the 60th anniversary of this fabulous concoction which is simply a big mud crab–only to be found in the waters around Singapore–sauteed to perfection in a big wok and then doused with a mixture of tomato sauce, garlic, eggs, scallions, chillis, and other herbs that give this dish a sweet and herbally and potent kick that is not soon forgotten–a fabulous balance between sweetness and spiciness–most wonderful!. . .totally delectable as we dive in and suck all of the meat that we can out of every nook and cranny of the crab. . .jaaaa!!  It’s a good bit of work, but it is totally worth it as we leave Roland in a satisfying state of harmony between food coma and ecstasy.

And after the meal, I satisfy my dessert craving with a real-deal Singapore Sling made by a real Singaporean in our Singaporean hotel–“when in Rome. . .”–saluti everyone!!

Day 22…Singapore eats–

IMG_0003IMG_0009 IMG_0019IMG_0024BAM!  We arrive in Singapore, check into our hotel, shower, then head out for dinner at the place that Anthony Bourdain made famous here: Sin Huat Eating House.  Sin Huat is located at 659 Geylang Road. . .it is owned and run by one guy. . .he takes your order–more accurately, he tells you what you will be eating this evening–then he goes into the kitchen and cooks everything to order for you. . .a couple of older ladies deliver everything to the table, bring us beers, and we gobble away. . .all amazingly good–mmmm, aaaahh!!  Above you see scallops with the tastiest black bean sauce that I have ever had. . .then you see the most famous dish here: Crab Bee Hoon. . .a whole mud crab sauteed to perfection in the cook’s giant wok with lots of bee hoon noodles, garlic, scallions, and maybe one or two more herbs. . .all tasty and delightful. . .I will eat here again any time that I have the chance.  The dude here only takes cash so be sure that your pockets are full of Singaporean Dollars before you hit this place otherwise you will be washing a lot of bee hoon dishes for a long time. . .probably get a couple of lashes from a cane as well.

Anyway, I send you authentic vibes from Sin Huat Eating House in Singapore. . .feel them. . .they are good for your fertility and virility.
