POW! So, on our first full day here in Singapore we have to pop into a place called Roland Restaurant. Roland Restaurant is where the signature dish of Singapore, Chilli Crab, was created, and I gotta tell you, this thing is extremely good. . .mmm, aaaahh!!–we love Chilli Crab at Roland in Singapore.
They have been knockin’ this dish out here for nearly 60 years now. . .2016 will be the 60th anniversary of this fabulous concoction which is simply a big mud crab–only to be found in the waters around Singapore–sauteed to perfection in a big wok and then doused with a mixture of tomato sauce, garlic, eggs, scallions, chillis, and other herbs that give this dish a sweet and herbally and potent kick that is not soon forgotten–a fabulous balance between sweetness and spiciness–most wonderful!. . .totally delectable as we dive in and suck all of the meat that we can out of every nook and cranny of the crab. . .jaaaa!! It’s a good bit of work, but it is totally worth it as we leave Roland in a satisfying state of harmony between food coma and ecstasy.
And after the meal, I satisfy my dessert craving with a real-deal Singapore Sling made by a real Singaporean in our Singaporean hotel–“when in Rome. . .”–saluti everyone!!
