Roister is owned and run by a dude called Grant Achatz who also owns and runs ‘Alinea.’ Alinea has three Michelin stars and Roister has one Michelin star making Grant the most-starred chef in Chicago–way to rock it, dude!. . .Alinea is high-end and chi-chi. . .Roister is kinda high-end and much more relaxed and casual than Alinea. . .WE…LOVE…ROISTER!
This Grant dude can cook…there is lots of delectable stuff to gobble at Roister…mmm!! The restaurant is centered around a big open-flame hearth where many of the dishes served here are prepared. It is warm…it is primal…it is smooth…it is chill and organized…and it is delicious. . .we could not be happier here.
We book two seats down in the ‘prep kitchen’ area for the nightly tasting menu…our meal includes tasty oysters, crab salad, a radish salad that looks almost as good as it tastes (see above)–jaaa!!, a delicious pomegranate broth soup thing, fried chicken and tasty slaw–maybe the best we have ever had, an apple cider sorbet, and chocolate-covered foie gras chunks with a few grains of salt on top–AMAZINGLY GOOD. All of this is washed down with a grand cru from St. Emilion…this was substituted because our other choice of wine was sold out–we love spontaneous upgrades. Thank you, madame sommelier!
So, do your best to secure some seats at Roister for dinner the next time you find yourself in Chi-town. . .the staff will welcome you with open arms, and you will have a meal that you will not soon forget.
