Best boiled crawfish in the world–

IMG_0023 IMG_0021 IMG_0019OH BOY!  Hawk’s in Rayne, Louisiana is “home of the best boiled crawfish in the world.”  That’s what the sign says, and you better believe it because it is true.  The reason Hawk’s is the best is because they purge their crawfish, that is, they put them in big tanks of water for a day or so and let them clean out their intestinal tracts before being cooked and served.  This gives them a ‘cleaner’ taste they say, and I have to agree. . .these babies taste clean and spicy and delectable. . .plus, they seem to get the biggest crawfish available–never seen or eaten any as big as these before. . .amazing and delicious.  You gotta drive deep into the countryside to find this place, but once you do, get ready for the best crawfish boil you have ever had.  Oh, also keep in mind that Hawk’s is only open during crawfish season which runs from roughly the beginning of October to the end of May or early June at the very latest. . .

. . .if you are here off-season, then do know that Rayne is the “frog capital of the world” which means that frogs are always available for some gobblin’–there is no wanting in Rayne, Louisiana. . .eat whatever is available, and you will find satisfaction down here–mmmm, aaaahh!
